Salads


Linda and Granny made a Pasta Salad. Monique made Chicken Salad sandwiches and Pasta.
Rome made Fruit and Debbie made a Fruit and Pudding Cake.
Becky made a Strawberry Salad. All of the food was great!

Recipes:

Pasta Salad****

5 cups dry Tri color Rotini
1 bunch green onion
4 medium vine ripe tomatoes
1 colored bell pepper chopped
3 1/2 oz. hard salami cut into chunks
2 cans black olives
green olives ( optional)
1 16 oz. Caesar Kens Steak House Bottled dressing

Mix all together and let set.

mandrin oranges
strawberries
candied pecans
Raspberry Vinagrette Salad dressing

Learning To Crochet ( Project Linus)


The Relief Society is helping out with the Project Linus service. We are making baby blankets of all kinds and sending them in for needy children. Yesterday we were learning how to crochet blankets for the project. We started out by learning how to crochet a dish cloth, which is a small version of the blanket. It is easy and fun to do. If you know how to crochet here is the directions:

Size I crochet hook
18 oz. of 4-ply machine washable yarn

Directions:

Chain 92 loosely,

ROW 1 : In the 5th chain from hook, work 1 sc, ch 2, and 2 dc, * skip 2 ch, work 1 sc, ch 2, and 2 dc all in the next ch. Repeat from * across to last 3 ch ( 29 cluster), skip 2 ch, work 1 dc in the last ch.

ROW 2: Chain 3, turn. Work 1 sc, ch 2, and 2 dc clusters all in the first ch-2 loop. Repeat in all loops across to last loop. Work 1 dc in the ch-3 space at the end of row.

Repeat Row 2 until piece measures approximately 36". Do not break off yarn. Continue around the corner and the remaining 3 sides of the blanket, working 1 sc- ch 2 - 2 dc clusters in each space. Slip st at the end. Break off with 3 inches of yarn and weave in the yarn ends. Admire your work and then bring it to your nearest Project Linus coordinator to be given to a child in need!

It really is easy. I finished my dish cloth in a about 1 1/2 hours or more. Now I have started a blanket! Granny, Linda and Becky have made several each.

Fondue

This month we learned how to make fondue. It was pretty easy and really yummy!

16 oz. Swiss Cheese, shredded
2 T All purpose or Bread flour
1/2 C Chicken Broth
PREPARATION:
1. In large mixing bowl, sprinkle flour over cheese. Shake to coat cheese with flour.
DIRECTIONS:
1. Right before you are ready to eat, add chicken broth to fondue pot, bring to boil.
2. Add cheese/flour mixture one cup at a time, letting each melt before adding the next.
3. As soon as cheese is all melted, move to table and serve.
*Serves four*
TIP:
If fondue looks curdled, add more cheese ( any kind )
DIPPING SUGGESTIONS:
Cubed french bread
Cubed rye bread
Cubed pumpernickle bread
Roasted potatoes
Apple chunks
Raw or steamed broccoli
Raw or steamed carrots
Mushrooms
Breaded chicken chunks
Cherry tomatoes

Easy Chocolate Fondue

This chocolate fondue was so good! We all loved it!

1 bag of Semi-sweet chocolate chips
1 t shortening
DIRECTIONS:
1. Place chocolate chips and shortening in fondue pot (or small crock pot) and heat on low, stirring often until smooth.
OPTIONAL MICROWAVE DIRECTIONS:
1. Place chocolate chips and shortening in microwave safe dish. Heat for 30 second intervals, stirring in between, until smooth. Serve immediately, or transfer to fondue pot on low heat.
TIP:
Any left over solid chocolate can be substituted for chips.

Strawberries
Pineapple
Apples
Bananas
Brownies
Cream puffs
Marshmallows

Fun Making Tortillas

A group of us started getting together each month and sharing recipes and cooking together. Today we cooked tortillas. ~Recipe Below~
Each of us took turns rolling out our tortillas. They are really good and when you make these you'll never want to buy them in the store.
Everybody enjoyed making and eating them. We had chicken and beef along with other toppings. Hope you enjoy making them!
Below is the recipe and finished taco. We also had a mexican cake ~ recipe coming soon~


Flour Tortillas

1 1/2 cups boiling water
4 cups all purpose flour
2 TSP salt
2/3 cup crisco
pre-heated skillet

Put flour, salt and crisco into large mixing bowl. Crumble with hands. Mix in boiling water a little at a time. Knead into soft dough. Pinch off dough into 24 golf ball size balls. Roll each ball into circles flipping and rotating after each roll. Cook tortillas on very hot non-sick or cast iron skillet. Flip tortilla when it begins to "bubble". Cook each one for approx 1 1/2 minutes. Put cooked tortillas into towel and cover while cooking other tortillas.
